The Picnic Basket

Processed with VSCOcam with f1 presetSummer is hanging on but who knows how much longer we’ve got to enjoy it. I love picnics. They’re one of my favourite parts of the summer, so I’ve compiled a virtual Picnic Basket for you. It’s a collection of picnic friendly recipes with everything from salad to doughnut muffins. 

Snacks
The thing I love most about picnics is it’s a great excuse to eat all the foods. You get to combine all meals into one and that includes snacks! These Cheese Straws are easy to make and super versatile. Shakes things up a bit by adding some dry chilli flakes or maybe even some olives or crushed garlic! Option number 2 is something a little different; Ondhwa. This Indian savoury cake is lightly spiced and made with rice and lentil flours. Yes that’s right guys, it’s gluten free!

Finger Food
Sandwiches can be the downfall of a picnic. With the wrong fillings they can end up soggy, or too dry, or boring. The spread might not go right up to the crusts. The bread might be terrible. So many possible errors to make. Why not make these Spinach, Mushroom & Feta Parcels? Fancy something a little more filling? Then these Pasties might be more your bag. I’d suggest subsitiuting the Artichoke for pototo as it’s not in season at the moment. DSC_0076P1070699

Salad

Salads don’t have to be boring, unsatisfying bowls of leaves. These two salad recipes are the holy trinity when it comes to salads; healthy, seasonal and filling! Broad Bean & Pea Salad w/ Zingy Dressing and Green Lentil & Bulgur Wheat  (there’s halloumi in this one).

Sweet
Every picnic needs a sweet ending.  These mini versions of Black Forest Loaves and Tropical Victoria Sandwiches are as delicious as they are cute. If you’re looking for something a little simpler try these Doughnut Muffins.

Drinks

Finally a refreshing beverage to quench your thirst. This Raspberry Lime Lemonade could even be made into ice lollies (if you’re picnic-ing at home) or have a sly bit of gin added to it!
